2013 Cabernet Sauvignon, Vintner Select
Temptingly rich and layered, a firm, ripe, muscular wine that’s deep, structured, intense and concentrated, serving up a mix of ripe currant, cassis, plum, black cherry and blackberry fruit with touches of anise, cedar and black licorice. Full-bodied, gaining depth and turning ever more elegant and detailed, with tannins that give this wine traction. 50% of this Cabernet was barrel fermented in 100% French oak barrels. The heads of the barrels were removed to facilitate punch downs. Two different yeasts were used to extract additional layers of complexity. The two processes of fermentation were matured separately in 100% French oak barrels and blended prior to bottling. Only 27 cases of this wine was produced using only the best of all the Cabernet produced this vintage.
